VEGETARIAN CHILI

Sometimes just deciding what to make for dinner is the problem! If someone could just tell me, that would be great!! But most of the time I am deciding myself. Usually I look around instagram and Facebook for inspiration, or ask my friends.
Tonight i decided to make a vegatarian chilli

This is what I did:
The ingredients I used were as follows
2 tbsp olive oil
1 onion, diced
1 clove of garlic, crushed
1 stalk of celery, diced
1 yellow pepper, diced
3/4 cup frozen corn kernels
i zucchini, diced
1 can red kidney beans, rinsed
1 can black beans, rinsed
1 28 oz can of diced tomatoes and the juice
1/2 cup of water
1 can of condensed tomato soup
1 tbsp chili powder ( or as much as you like)
1 tsp cumin
1 tsp salt
In a medium sized saucepan:
I sautéed the onion & garlic in the 2 tbs of olive oil until translucent- of course it started to brown...which is ok!!
Then added the celery and continued to sauté until the celery started to cook and becomes translucent
Next I added the diced yellow pepper and the zucchini and mix well with the onion mixture. I cooked this for about 5 minutes, stirring occasionally
Add the rest of the ingredients and mix well
Bring to a boil and then reduce the heat so that the chili is simmering with a medium bubble, cover but stir often so it doesn't stick to the bottom of the pot! I simmered this for about an hour.
**** you can always add some ground beef, chicken or turkey , just sauté the meat with the onions!!
I served this with some corn tortillas that I warmed up in an ungreased frying pan and some mashed up avocado that I added cilantro and lemon juice to and a pinch of salt.
