Yesterday I roasted some chicken, seasoned it with salt, pepper, turmeric and drizzled some hot chilli pepper olive oil on it. Schmeared it all around so each bit of chicken would be tasty! Into the oven it went. I carefully basted it and looked after it in the oven, then forgot about it!
Eventually I remembered but by that time the chicken was well overdone ...which on one hand is ok as I always worry about undercooking the chicken, but this is like chicken jerky my son said. So what to do? Made a big salad with a delicious tahini dressing I got from Canadian Living Magazine, put dates and almonds in the salad and chopped up that chicken jerky and dumped it in!!! Waiting to see if Murray has a hard time chewing the chicken :)
